Boasting a depth and refinement that can only come with age, our Old and Rare American Oak single casks are matured for a minimum of sixteen years in American oak casks previously used to age Bourbon. Aside from the notes of vanilla, caramel, coconut, fruit, and subtle white floral and herbal nuances, these whiskies are hugely textural with incredible complexity and length of palate. Each bottle is presented in a hand-made, solid wood presentation box and includes a letter of authenticity signed by our Head Distiller Heather Tillott. As a single cask bottling, every tiny batch is different, expressing the unique characteristics of each barrel.
Old & Rare American Oak ex-Bourbon Single Cask TD0207 was distilled in July of 2007 and decanted in March of 2024, maturing at 16 years and 7 months in a single, 200L American oak ex-Bourbon cask. Bottled at 47.6%, this cask produced 213 bottles.

Tasting Notes:
Nose
Soft, perfumy and delicate, an incredibly broad array of fruit notes open. Classic distillery traits of warm tropical fruits (papaya, kiwi, pineapple), quickly followed by stewed rhubarb, cherries, and honey on rye bread. As the rye bread note moves into Brazil nuts and ground nutmeg, the earthy, slightly funky (and much loved) corners of complexity found within Sullivans Cove spirit character begin to open up �brine, chicken ph�broth and musk. Sweet citrus notes of lemon and orange boiled candies compliment notes of melon and sherbet, as buttered popcorn and toffee apple chews see you to the palate.
Palate
In a beautiful display of integration between spirit and oak, nectarine and peach rush in to meet the toffee apple chew note from the nose, smoky lavender rises from the spirit character, and fresh vanilla bean ushers in a wave of American oak sweetness �cinnamon, maple, pastries, and more nutmeg. The texture is soft and waxy, and the spirit is bright, full-bodied, and boasting incredible depth of flavour. As the palate opens, further notes of buttered pastries (the really good butter), sweet ginger and fresh apple juice move together in a dance between depth and brightness. No stepping on toes here: just beautiful harmony between the notes.
Finish
A big finish is an understatement. Just wow! Creamy, taffy-like, musky, and buttery. All the fruits from the nose and palate circle back (warm nectarine, peach tarte tatin), and the finish culminates with notes of candied lemon, toffee and a deep berry richness almost akin to fortified wine (despite the total lack of wine pre-fill in the maturation!). The length is remarkably well sustained, and rose water lingers in the air long after the last sip has been taken.
