GRAPES/BLEND
52% Cabernet Sauvignon, 48% Shiraz.
VINIFICATION
The two varieties were hand-picked, destemmed and fermented separately. Gently basket pressed. The Cabernet matured for 15 months in finne-grained Bordeaux coopered barrels (60% new). The Shiraz was barrelled down to 1- 2 year old puncheons, remaining on lees for 6 months. Final percentage of new oak in the blend is 50%. The finest lots from each variety were selected and blended shortly before bottling.
VINTAGE NOTES
The growing season was affected by a very hot spring, leading to the lowest yields on our record. When the grapes started their ripening process in January, the weather miraculously cooled to a very mild ripening season. This resulted in wonderful concentration of flavour, retention of natural acidity and brightness of fruit, delivering wines with beautiful finesse and balanced tannins.
