2019 Penfolds Bin 407 Cabernet Sauvignon 1.5L Magnum Original Wood Box
Launched with the 1990 vintage in 1993, Bin 407 was created in response to the increasing availability of high-quality Cabernet Sauvignon fruit. Inspired by Bin 707, Bin 407 offers excellent varietal definition and approachability, while still delivering structure and depth of flavor. As a textbook Cabernet Sauvignon, Bin 407 demonstrates the advantages of Penfolds' multi-region, multi-vineyard blending, with ripe fruit at its core, supported by judicious use of both French and American oak.
**Drinking Window:** 2022 - 2042
**Producer Tasting Notes:**
- **Colour:** Deep, lively red
- **Nose:** Instantly recognizable as Cabernet, featuring fragrant violet, lavender, blue fruits, and a hint of red apple blossom. Additional notes include baked Danish pastry, croissant, and rye bread crust. Mediterranean flavors of thyme, oregano, and olive emerge, alongside scents of chamois, new-buck leather, and cedar. Oak presence is respectful, allowing the fruit to shine.
- **Palate:** Medium-bodied, offering a complete package of flavors. Juicy redcurrant jelly, dark plum, and fresh rhubarb provide a vibrant fruit profile. The acidity is perfectly balanced, creating a lively and lifted experience. Tannins are polished and integrated, with subtle oak blending seamlessly with the fruit. Overall, the wine shows excellent balance and varietal definition without exaggeration.

Sourced from Padthaway, Coonawarra, Wrattonbully, McLaren Vale, and Barossa Valley.
**Ageing:**
Aged for 12 months in French (27% new) and American (8% new) oak hogsheads.
