About This Wine
From very poor Kimmeridgian marl soils with rocks on the surface and a steep 38% south-east slope, this Chardonnay undergoes alcoholic fermentation with natural yeast at 18°C for three weeks, followed by full malolactic fermentation. The wine is aged on fine lees with monthly stirring for eighteen months to build richness, texture and longevity. The élevage contributes to its distinctive oxidative character and long maturation profile.

Domaine Daniel-Etienne Defaix is known for long lees ageing, natural yeast fermentations and extended cellaring before release. The domaine farms historic family vineyards in Chablis, producing wines that reflect purity, minerality and mature complexity.
