William Fèvre Chablis is a classic, benchmark expression of this famous northern Burgundy appellation. Sourced from estate vineyards and carefully selected growers, it offers the purity, precision and minerality that Chablis lovers seek, without the need for grand cru prices. The domaine is known for its restrained winemaking and deep respect for terroir, with many vines planted on prized Kimmeridgian limestone soils that lend the wines their signature flinty edge.
Winemaker Didier Séguier guides the estate’s philosophy of minimal intervention. Fermentation is mostly in stainless steel, with a small proportion aged in neutral oak to add subtle complexity without diminishing the razor-sharp freshness that defines good Chablis.
In the glass, this wine shows aromas of lemon peel, green apple, white flowers and a whisper of oyster shell. The palate is taut and saline, with citrus zest, crushed stone and bright acidity driving through a long, clean finish. It’s dry, elegant and refreshingly understated.
