In 2000, after more than 35 years of winemaking with some of Australia's top wineries, friends David O'Leary and Nick Walker founded O'Leary Walker Wines. They quickly gained a strong reputation, especially for their exceptional Polish Hill River and Watervale Rieslings, as well as classic Clare Valley Shiraz.

The Watervale fruit comes from Neil and Heather Grace's vineyard, which is dry-grown (dependent on natural rainfall) and hand-pruned and -picked. The vineyard's red loam over limestone soil provides essential moisture from the limestone, keeping the vines healthy through summer.
"Pale lemon in color, with lifted kaffir lime, citrus blossoms, and orange zest on the nose, alongside subtle wild fennel notes. The palate is fine yet powerful, with a long finish and balanced acidity. Enjoy now or cellar for 15-20 years. The fruit is hand-harvested, de-stemmed, and crushed, then gently pressed. Free-run juice is chilled to preserve vineyard expression, with a cool fermentation over 10-14 days ensuring maximum purity." — O'Leary Walker
