“Refined and pure aromas of lemon peel, chalk, beeswax, orange blossoms and white flowers. The palate is medium-bodied with striking acidity and a creamy texture, giving notes of lanolin, freshly cut pineapple, grapefruit rind, flint and river stones. Very complex and complete, with an underlying tension and minerality. Made from 65% sauvignon blanc, 25% semillon and 10% muscadelle. Exceptional. Drink or hold. Screw cap.”

About This Wine
The vineyard for this wine is planted to 75% Sauvignon Blanc, 20% Semillon and 5% Muscadelle. Each variety is picked at optimum ripeness and fermented separately to preserve distinct varietal character. Sauvignon Blanc is picked once herbaceous flavours have diminished, Semillon when acidity softens, and Muscadelle at peak flavour intensity.
Older barrels are used for the entire production, with full barrel fermentation. Hard pressing is employed to enhance texture, and lees stirring is used to build body and complexity. The wine is typically aged in barrel for 11 months, during which primary fruity elements settle and more complex aromas begin to develop.
