The 2021 Noon Winery Reserve Cabernet Sauvignon is one of Australia's most limited and highly sought-after Cabernet Sauvignons. Produced by Drew Noon at Noon Winery, this flagship wine is sourced from exceptional old-vine vineyards in Langhorne Creek, a region renowned for producing Cabernet Sauvignon of remarkable concentration, structure, and longevity.
Only produced in vintages that meet the estate's exacting standards, the Reserve Cabernet represents the pinnacle of the Noon portfolio. The outstanding 2021 vintage delivered near-perfect growing conditions, resulting in fruit of exceptional purity, balance, and intensity.
Hand-harvested fruit was carefully sorted and fermented before maturation in premium French oak. The focus remains firmly on vineyard expression, allowing the character of Langhorne Creek Cabernet Sauvignon to shine through.
The wine reveals intense aromas of cassis, blackcurrant, blackberry, and dark plum, layered with notes of graphite, cedar, tobacco leaf, violets, and dark chocolate. The palate is powerful yet beautifully controlled, displaying concentrated dark fruit, fine-grained tannins, vibrant acidity, and extraordinary length.
Still youthful and tightly wound, the 2021 Reserve Cabernet Sauvignon is built for long-term cellaring and is expected to evolve magnificently over the next 20–30+ years.
