The 2014 vintage delivered Cabernet Sauvignon of outstanding concentration and tannin quality across South Australia. Bin 707 is a multi-regional blend, drawing on premium Cabernet parcels primarily from the Barossa Valley, McLaren Vale, and Coonawarra. This approach combines richness, regional complexity, and structural precision, resulting in a wine of formidable scale and balance.
In the winery, fruit underwent extended fermentation and maceration to extract deep colour, flavour, and firm structural tannins. The wine was matured for approximately 18 months in 100% new American oak hogsheads, a defining hallmark of Bin 707, contributing power, spice, and a framework built for decades of cellaring.
Aromatically, the wine is intense and layered, showing blackcurrant, cassis, dark plum, and blueberry, supported by notes of cedar, vanilla, cocoa, graphite, and savoury oak spice.
