Tasting Notes
With over a decade of careful aging, this Semillon presents an alluring golden hue and a complex aromatic profile. Expect vibrant notes of lemon curd, lime zest, and toasted brioche, interwoven with subtle hints of honey and lanolin. On the palate, it delivers a beautifully structured balance of bright citrus flavors, delicate minerality, and a lingering, crisp acidity, leading to a refined and long-lasting finish.
Winemaking
Hand-picked from some of the oldest and best Semillon vineyards in the Hunter Valley, the grapes undergo a meticulous winemaking process. Fermentation occurs in stainless steel to preserve the purity of fruit, followed by bottle aging to develop its signature depth and complexity.
Cellaring & Food Pairing
A benchmark in Australian Semillon, the 2012 Vat 1 is drinking superbly now but will continue to evolve gracefully for another 10�5 years. Best enjoyed with fresh seafood, oysters, grilled fish, or creamy poultry dishes, complementing its zesty acidity and layered texture.
