About This Wine
This Premier Cru Chardonnay comes from the Montée de Tonnerre vineyard east of Chablis on the right bank of the Serein river. The site shows a generally southwest aspect and is known for producing mineral, intense wines with nutty and honeyed characters as they age. Kimmeridgian clay and limestone soils underpin the vineyard, contributing to its recognised quality.
About the Winery
Domaine François Raveneau is a noted Chablis producer established in 1948, when François Raveneau and his wife combined their families’ vineyard holdings. It was the first generation to bottle wines from estate-grown fruit.
The domaine farms around eight hectares across grand cru sites Blanchot, Les Clos and Valmur, and premier cru parcels including Montée de Tonnerre, Les Vaillons, Butteaux, Chapelot, Montmains and Forêt. Most plots lie on southwest-facing slopes, planted on Kimmeridgian clay and limestone. Vine age averages around 30 years, with Montée de Tonnerre averaging around 50 years.
All grapes are hand harvested and fermented with indigenous yeasts, followed by malolactic fermentation in barrels. The wines age for extended periods, typically at least 12 months and occasionally up to eight years in barrel or feuillette. Only a small proportion of new oak is used, and wines are fined and only occasionally filtered.
