"From a tiny .143 ha parcel of vines planted in 1961. About This Wine
This Chambertin Grand Cru from Domaine Ponsot is crafted with meticulous fruit handling. Grapes are hand-picked into wicker baskets, transferred into small crates no heavier than 17 kg to preserve berry integrity, and sorted manually in the vineyard with multiple layers of selection if needed. The domaine does not fine or filter and uses very little sulphur, limiting oxygen exposure throughout élevage. Ageing occurs for two years in oak barrels, with no new barrels used.
About the Winery
Domaine Ponsot, led by Laurent Ponsot, follows a philosophy of minimal intervention, avoiding new oak, fining and filtration. Racking and bottling take place under a waning moon and high atmospheric pressure, and inert gases are used to prevent oxygen exposure. SO₂ is applied only at crushing, disappearing almost entirely during fermentation.
