The 1997 Wendouree Cabernet Sauvignon is a rare and highly sought-after example of traditionally made Clare Valley Cabernet, revered for its longevity, structure, and uncompromising old-school style. Produced by the legendary Wendouree, this wine reflects the estate’s steadfast philosophy of minimal intervention, low yields, and wines built expressly for extended ageing rather than early approachability.
Fruit for the 1997 vintage was sourced from Wendouree’s low-yielding estate vineyards in the Clare Valley, a region known for its elevation, cooling influences, and ability to produce Cabernet Sauvignon with firm structure and natural acidity. The vintage conditions delivered fruit of depth and balance, laying the foundations for a wine capable of long-term evolution.
Winemaking followed Wendouree’s famously traditional methods. Fermentation and extraction were handled to prioritise structure and longevity, and maturation took place in seasoned oak, allowing the fruit and tannin profile to develop without overt oak influence. Bottled without fining or filtration, the wine was released built for decades in the cellar.
With more than 25 years of bottle age, the wine now shows a deeply complex and mature profile. Aromas of blackcurrant, dried plum, and cassis have evolved into layers of leather, earth, tobacco leaf, dried herbs, and savoury spice.
