Vineyard and Winemaking
Salon produces Champagne only in exceptional years, from a single cru, a single grape, and a single vintage. The 1996 harvest delivered grapes of exceptional ripeness and piercing acidity, resulting in a wine of remarkable tension and balance. Fermentation took place in stainless steel to preserve freshness, followed by nearly two decades of ageing on lees before disgorgement, allowing complexity and depth to unfold.
