Rigorous canopy management and careful viticulture delivered healthy grapes with excellent concentration and bright natural acidity.\u003c\/p\u003e\n\n\u003ch3\u003eWinemaking\u003c\/h3\u003e\n\u003cp\u003eThe East Coast Chardonnay was harvested by hand and chilled overnight before being whole-bunch pressed into seasoned 300-litre and 500-litre French oak barrels. Wild fermentation proceeded with the inclusion of some grape solids.\u003c\/p\u003e\n\u003cp\u003eHalf of the wine received sulphur immediately after primary fermentation. The remaining half was stirred without added sulphur for three months.
