The fruit is hand selected, sorted and fermented in small batches followed by intense barrel selection, and stored underground for 18 months.\u003c\/p\u003e\n\u003cp\u003eThe evolution of Bin No. 0 begins many years ago – there are old bottles in Best's cellar door with Hock 0 labels made by Joseph Best from the late 1800s. When references to French terms were removed from labels in the 1980s, Bin No. 0 began its life as Claret No. 0.
